With an abundance of cucumbers in our garden I have been trying out recipes to preserve them.
I like this relish it is sweet and tangy.
Ingredients
2 kg cucumbers, peeled and diced
¼ cup salt
1 red pepper, diced
1 green pepper, diced
250 g brown onion, peeled and diced
3 sticks celery, diced
15 g mustard seeds
350 g sugar
430 mL white vinegar

Method
- Place cucumber in a bowl and sprinkle with salt. Stand for 3 hours or overnight.
- Drain the liquid from the cucumbers.
- Place all ingredients in a large pan and stir over low heat until the sugar dissolves.
- Increase heat and bring to the boil. Simmer for 30 minutes or until vegetables are well cooked.
- Pour into hot jars and seal.
