Cucumber Relish

With an abundance of cucumbers in our garden I have been trying out recipes to preserve them.
I like this relish it is sweet and tangy.


2 kg cucumbers, peeled and diced
¼ cup salt
1 red pepper, diced
1 green pepper, diced
250 g brown onion, peeled and diced
3 sticks celery, diced
15 g mustard seeds
350 g sugar
430 mL white vinegar


  1. Place cucumber in a bowl and sprinkle with salt. Stand for 3 hours or overnight.
  2. Drain the liquid from the cucumbers.
  3. Place all ingredients in a large pan and stir over low heat until the sugar dissolves.
  4. Increase heat and bring to the boil. Simmer for 30 minutes or until vegetables are well cooked.
  5. Pour into hot jars and seal.
